Easy Peesy Lemon Squeezy

Ingredients                                     Makes 1 cake

150g  Butter

150g  Sugar

3        Eggs

150g  Flour

1/2 teaspoons vanilla extract

2-4 tablesppons Milk

1 whole lemon

1. Preheat your oven to 180c, 350f or Gas Mark 4

2. Firstly put your butter, sugar and vanilla extract into your mixing bowl and beat them together until they are fluffy and creamy.

3. Next crack 1 egg into the bowl with a couple tablespoons of flour then mix it up. We add them together at the same time so the egg dosen't curdle. Repeat the egg and flour process until you have cracked all the eggs and used all the flour, if you have extra flour mix that in.

4. Scrape the bowl down with a rubber spatula.

5. Now put you mixer on the lowest speed and mix in the milk a little at a time.  (You can stop the mixer after mixing each bit of milk to have a look if you like)

6. Zest the whole lemon and add that into the mix and mix that in as well.

7. Pour your mix into a greased cake pan and cook for 15 - 20min or when you stick a toothpick or cake tester in and you pull it out it comes out clean

You can leave it like this or add icing

Ingredients
1 cup of icing sugar (confectioners or powdered sugar)
2-4 of water
1-2 tablespoons lemon juice(optional)

1. Mix the icing sugar and water in a smal bowl with a spoon until it forms a runny paste. (you can always add more icing sugar or water to the paste)

2. Add in the lemon juice and mix untill fully incorporated

3. Drizzle all over your cake

NOW ENJOY
YUM!
